Squash Casserole

Ingredients

  • about 2 1/2 to 3 lb. squash
  • salt and pepper
  • 1 Tbsp. oleo
  • 1/2 c. chopped onion
  • 1/4 c. chopped bell pepper
  • 1 can cream of chicken soup
  • 2 eggs
  • 1/3 c. sugar

Directions

    Cook squash until tender; drain.

    Add salt and pepper and oleo; mash and cool.

    Mix remaining ingredients well; add to squash.

    Mix in about 1 cup Velveeta cheese (cut into cubes).

    Spoon into greased or buttered casserole dish.

    Top with cracker crumbs and bake until brown and bubbly.
