- about 2 1/2 to 3 lb. squash
- salt and pepper
- 1 Tbsp. oleo
- 1/2 c. chopped onion
- 1/4 c. chopped bell pepper
- 1 can cream of chicken soup
- 2 eggs
- 1/3 c. sugar
Directions

1Cook squash until tender; drain.

2Add salt and pepper and oleo; mash and cool.

3Mix remaining ingredients well; add to squash.

4Mix in about 1 cup Velveeta cheese (cut into cubes).

5Spoon into greased or buttered casserole dish.

6Top with cracker crumbs and bake until brown and bubbly.
