Squash Casserole

Ingredients

  • 3 c. squash, drained
  • 1/2 c. celery
  • 1/2 c. onions
  • 1/2 c. bell pepper, chopped
  • 3 Tbsp. Weight Watchers margarine
  • 4 1/2 oz. cheese, shredded
  • 4 oz. plain yogurt
  • 4 oz. low-fat cottage cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder

Directions

    Mix together in blender the cottage cheese and yogurt.

    Boil squash until tender; drain and set aside.

    Saute celery, onions and green pepper until tender.

    Mix with squash.

    Add crackers, yogurt mixture, cheese and seasonings.

    Stir to mix.

    Bake in a casserole dish at 350° for 50 minutes.

    Should be brown on top. Makes 6 servings.
