Ingredients
- 2 lb. yellow squash, cooked, drained and mashed
- 1 Tbsp. oil
- 1/2 c. mayonnaise
- 1/2 tsp. ground red pepper
- 1/2 c. crushed crackers
- 3 carrots, grated
- 1 medium onion, chopped
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1 Tbsp. margarine
- 1/2 c. sharp Cheddar cheese, grated
Directions

1Saute carrots and onion in oil.

2Mix with black pepper, mayonnaise, salt and red pepper.

3Grease a casserole dish with 1 tablespoon of margarine.

4Pour mixture in dish.

5Sprinkle crushed crackers over top.

6Bake at 350° for 30 minutes.

7Remove from oven and sprinkle with cheese.
