Squash Casserole

Ingredients

  • 2 lb. yellow squash, cooked, drained and mashed
  • 1 Tbsp. oil
  • 1/2 c. mayonnaise
  • 1/2 tsp. ground red pepper
  • 1/2 c. crushed crackers
  • 3 carrots, grated
  • 1 medium onion, chopped
  • 1/4 tsp. black pepper
  • 1/4 tsp. salt
  • 1 Tbsp. margarine
  • 1/2 c. sharp Cheddar cheese, grated

Directions

    Saute carrots and onion in oil.

    Mix with black pepper, mayonnaise, salt and red pepper.

    Grease a casserole dish with 1 tablespoon of margarine.

    Pour mixture in dish.

    Sprinkle crushed crackers over top.

    Bake at 350° for 30 minutes.

    Remove from oven and sprinkle with cheese.
