- 2 c. yellow squash, mashed
- 1 can cream of chicken soup
- 2 medium carrots, grated
- 1 small jar pimentos
- 1 medium onion, chopped
- 1 c. sour cream
Directions

1Mix ingredients with salt and pepper to taste.

2Toss together 1 package Pepperidge Farm corn bread stuffing mix and 1 stick melted margarine; reserve half of mixture.

3Line casserole with other half.

4Add squash mixture.

5Cover over with reserved stuffing.

6Bake at 350° for 30 minutes.
