  • 6 medium yellow summer squash
  • 1/2 tsp. salt
  • 1 egg, well beaten
  • 1/2 c. milk
  • 1 can mushroom soup
  • 1/4 c. chopped onion
  • 1 can cream of celery soup
  • 1 c. grated Cheddar or American cheese
  • 8 soda crackers, crumbled

Directions

    Cut squash, then boil until tender; drain and mash.

    Combine all other ingredients, reserving a small amount of cheese and cracker crumbs (about 1/4 cup each).

    Pour mixture into a greased casserole; sprinkle with remaining cheese and cracker crumbs. Bake, uncovered, at 350° for 30 minutes, until brown.
