Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1 chopped onion
  • 1/4 c. butter or margarine
  • 2 beaten eggs
  • 1 can cream of mushroom soup
  • 1/2 c. cracker crumbs
  • salt and pepper to taste
  • grated cheese (Cheddar or Velveeta, optional)

Directions

    Cook squash and onion until tender.

    Drain well.

    Add butter and beaten eggs.

    Add soup, salt and pepper.

    Place in a buttered casserole and top with a thin layer of cracker crumbs.

    Bake 30 minutes in a 350° oven.

    Can add grated cheese (Cheddar or Velveeta) with the bread crumbs.
