- 2 lb. yellow squash
- 1 chopped onion
- 1/4 c. butter or margarine
- 2 beaten eggs
- 1 can cream of mushroom soup
- 1/2 c. cracker crumbs
- salt and pepper to taste
- grated cheese (Cheddar or Velveeta, optional)
Directions

1Cook squash and onion until tender.

2Drain well.

3Add butter and beaten eggs.

4Add soup, salt and pepper.

5Place in a buttered casserole and top with a thin layer of cracker crumbs.

6Bake 30 minutes in a 350° oven.

7Can add grated cheese (Cheddar or Velveeta) with the bread crumbs.
