Squash Casserole

  • 2 lb. yellow squash, sliced
  • 1/2 c. sour cream
  • 1/2 tsp. salt
  • 1 c. bread crumbs
  • 3 Tbsp. melted margarine
  • 1/4 c. melted margarine
  • 1/4 c. sliced green onions
  • 1/8 tsp. white pepper
  • 1/4 c. Parmesan cheese

Directions

    Cook squash in small amount of water until just tender; drain. Mash slightly; drain again.

    Combine with sour cream, 1/4 cup margarine, onions, salt and pepper to taste.

    Place in a greased 1-quart baking dish.

    Mix together bread crumbs and cheese.

    Toss with 3 tablespoons melted margarine and sprinkle over squash. Bake in a preheated 350° oven for 25 minutes or until bubbly.

    You can add 3/4 cup shredded sharp cheese to top of casserole.
