- 2 lb. yellow squash, sliced
- 1/2 c. sour cream
- 1/2 tsp. salt
- 1 c. bread crumbs
- 3 Tbsp. melted margarine
- 1/4 c. melted margarine
- 1/4 c. sliced green onions
- 1/8 tsp. white pepper
- 1/4 c. Parmesan cheese
Directions

1Cook squash in small amount of water until just tender; drain. Mash slightly; drain again.

2Combine with sour cream, 1/4 cup margarine, onions, salt and pepper to taste.

3Place in a greased 1-quart baking dish.

4Mix together bread crumbs and cheese.

5Toss with 3 tablespoons melted margarine and sprinkle over squash. Bake in a preheated 350° oven for 25 minutes or until bubbly.

6You can add 3/4 cup shredded sharp cheese to top of casserole.
