Squash Casserole

Ingredients

  • 1 1/2 lb. yellow squash
  • 4 medium grated carrots
  • 2 medium onions, chopped
  • 1 can cream of chicken soup
  • 1 small can pimentos
  • 1 pkg. Pepperidge Farm stuffing mix
  • 1 c. sour cream (8 oz.)
  • 1 stick margarine

Directions

    Boil squash until tender; salt to taste and mash.

    Mix carrots, onions, soup, pimentos, sour cream and margarine to cooked squash.

    Add 1/2 package of stuffing mix.

    Pour into greased baking dish and top with remaining poultry stuffing.

    Bake at 350° for 30 to 45 minutes.

    Can be divided into 2 casserole dishes.

    Freezes well!
