Squash Casserole

Ingredients
- 1 1/2 lb. yellow squash
- 4 medium grated carrots
- 2 medium onions, chopped
- 1 can cream of chicken soup
- 1 small can pimentos
- 1 pkg. Pepperidge Farm stuffing mix
- 1 c. sour cream (8 oz.)
- 1 stick margarine
Directions

1Boil squash until tender; salt to taste and mash.

2Mix carrots, onions, soup, pimentos, sour cream and margarine to cooked squash.

3Add 1/2 package of stuffing mix.

4Pour into greased baking dish and top with remaining poultry stuffing.

5Bake at 350° for 30 to 45 minutes.

6Can be divided into 2 casserole dishes.

7Freezes well!
