Squash Casserole

Ingredients

  • 2 c cooked squash
  • 1 small onion chopped
  • 1 can mushroom soup
  • 1 c sour cream
  • 1 grated carrot
  • 1 small jar pimento
  • 1 stick margarine, melted
  • 1 pkg Pepperidge Farm Herb Stuffing mix
  • Salt and pepper to taste
  • 1 c grated sharp cheese

Directions

    Cook squash and onion until tender and drain.

    Add salt and pepper to taste.

    After squash and onion have cooked and been drained, add other ingredients, except herb stuffing mix.

    Use 1/2 stuffing mix in squash. Pour all of the mixture in a casserole dish.

    Then sprinkle remaining herb stuffing mix over casserole. Bake in 350 oven for 20 minutes.
