- 1 lb. zucchini
- 3 Tbsp. butter
- 3 eggs, beaten
- 1 can cream of mushroom soup
- salt and pepper to taste
- 1 onion, sliced
Directions

1Cook squash and onion until tender.

2Drain and mash.

3Fold in remaining ingredients.

4Place in buttered casserole and top with cracker crumbs and Parmesan cheese.

5Bake at 350° for 30 minutes.
