Squash Casserole

Ingredients

  • 2 lb. squash (zucchini or summer squash), sliced in 1/4-inch slices
  • 1/2 c. water
  • 1/2 tsp. salt
  • 1 c. onions, chopped
  • 1 c. red or green pepper, chopped
  • 1/4 c. margarine, melted
  • 1 egg, beaten
  • 1 c. shredded Cheddar cheese
  • 1 (8 oz.) can sliced water chestnuts, drained
  • 2/3 c. mayonnaise
  • 2 tsp. sugar
  • 1/4 tsp. pepper

Directions

    Combine squash, water and salt and cook until just barely tender.

    Drain and set aside.

    Saute onions and peppers in margarine until crisp-tender (about 3 minutes).

    Combine vegetables, egg and next 5 ingredients.

    Spoon into greased casserole or 9 x 13-inch pan.

    Bake at 350° for 30 minutes.
