Ingredients
- 2 lb. squash (zucchini or summer squash), sliced in 1/4-inch slices
- 1/2 c. water
- 1/2 tsp. salt
- 1 c. onions, chopped
- 1 c. red or green pepper, chopped
- 1/4 c. margarine, melted
- 1 egg, beaten
- 1 c. shredded Cheddar cheese
- 1 (8 oz.) can sliced water chestnuts, drained
- 2/3 c. mayonnaise
- 2 tsp. sugar
- 1/4 tsp. pepper
Directions

1Combine squash, water and salt and cook until just barely tender.

2Drain and set aside.

3Saute onions and peppers in margarine until crisp-tender (about 3 minutes).

4Combine vegetables, egg and next 5 ingredients.

5Spoon into greased casserole or 9 x 13-inch pan.

6Bake at 350° for 30 minutes.
