Squash Casserole

- 8 to 10 medium squash
- 1 medium onion
- 2 eggs
- 1/2 c. milk
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. sugar
- 15 to 20 saltine crackers
- 2 Tbsp. margarine (optional)
- 1 c. Cheddar cheese, grated
Directions

1Cook squash with small amount of water until tender.

2Drain excess water; mash.

3Add and beat in eggs, milk, salt, pepper, sugar and crackers.

4Pour into casserole dish; dot with butter, if desired (my mother does, but I don't), and top with cheese.

5Bake at 425° for 20 minutes or until firm and lightly browned.
