Squash Casserole

  • 8 to 10 medium squash
  • 1 medium onion
  • 2 eggs
  • 1/2 c. milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. sugar
  • 15 to 20 saltine crackers
  • 2 Tbsp. margarine (optional)
  • 1 c. Cheddar cheese, grated

Directions

    Cook squash with small amount of water until tender.

    Drain excess water; mash.
  3. 3
    Add and beat in eggs, milk, salt, pepper, sugar and crackers.

    Pour into casserole dish; dot with butter, if desired (my mother does, but I don't), and top with cheese.

    Bake at 425° for 20 minutes or until firm and lightly browned.
