- 2 lb. squash
- 1/2 c. chopped onion
- 3/4 c. Ritz crackers
- 4 Tbsp. butter
- 1 1/2 c. grated sharp Cheddar
- 3 eggs
- 1/2 c. evaporated milk
- salt and pepper to taste
Directions

1Cook sliced squash in boiling water until fork-tender.

2Drain. Add cracker crumbs to squash.

3Add butter, 1 cup cheese, salt and pepper.

4Beat eggs lightly with evaporated milk.

5Pour into buttered casserole dish.

6Sprinkle remaining cheese on top.

7Bake at 425° for 30 to 45 minutes, until medium dry.
