  • 1 lb. yellow squash, cut up
  • 1/2 c. onion, chopped
  • 1/2 c. bell pepper, chopped
  • 1/2 c. water chestnuts
  • 1/4 c. mayonnaise
  • 1 egg, beaten
  • 1/2 stick oleo
  • 1/2 c. grated Velveeta cheese
  • lightly buttered bread crumbs
  • paprika

Directions

    Cook vegetables in a very small amount of salted water. Add oleo and cheese and let melt; add mayonnaise and beaten egg. Mix well and pour into a buttered casserole dish. Add lightly buttered bread crumbs. Sprinkle with paprika. Bake at 350° for 30 to 40 minutes.
