Squash Casserole

Ingredients

  • 2 c. squash
  • 1 can cream of chicken soup
  • 2 medium grated carrots
  • 1 small jar pimiento
  • 1medium finely chopped onion
  • 1/2 pt. sour cream
  • 1 pkg. stuffing mix (unseasoned)
  • 1 stick oleo

Directions

    Mix all ingredients, except oleo and stuffing.

    Melt oleo and mix with stuffing.

    Put layer of stuffing into pan.

    Pour squash mixture over.

    Reserve 3/4 stuffing mix to put over top the last 15 minutes.

    Bake at 300° for 1 1/2 hours or at 250° for 2 hours and 15 minutes.
