- 1 lb. yellow squash
- 2 Tbsp. butter
- 1 c. Ritz cracker crumbs
- 1 c. grated cheese
- 1 c. milk
- 2 eggs, beaten
- 2 Tbsp. diced onions (optional)
- salt and pepper
Directions

1Cut squash in slices, cook in salted water and drain thoroughly.

2Mash to a pulp.

3Add butter and stir.

4Add eggs, milk, crumbs and onion. Pour into grated 1 1/2-quart baking dish. Cover with grated cheese.

5Bake at 350° for 25 to 30 minutes.
