Squash Casserole

  • 4 c. thinly sliced squash (use mixture of zucchini and yellow crookneck squash)
  • 1 c. cracker crumbs
  • 1 c. grated Cheddar cheese
  • 1 c. diced tomatoes
  • 1 medium onion, chopped
  • 3 eggs
  • 2 Tbsp. chopped parsley
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. salad oil

Directions

    Saute onion in salad oil until soft.

    Beat eggs with seasonings and combine with squash.

    Grease a 10-inch square casserole.

    Add squash and tomatoes to casserole, then grated cheese; top with cracker crumbs.

    Bake at 325° for 45 minutes, or until set and top is golden.
