- 4 c. thinly sliced squash (use mixture of zucchini and yellow crookneck squash)
- 1 c. cracker crumbs
- 1 c. grated Cheddar cheese
- 1 c. diced tomatoes
- 1 medium onion, chopped
- 3 eggs
- 2 Tbsp. chopped parsley
- 1 Tbsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. salad oil
Directions

1Saute onion in salad oil until soft.

2Beat eggs with seasonings and combine with squash.

3Grease a 10-inch square casserole.

4Add squash and tomatoes to casserole, then grated cheese; top with cracker crumbs.

5Bake at 325° for 45 minutes, or until set and top is golden.
