Ingredients

  • 1/2 onion, chopped
  • 1/2 green pepper, chopped
  • 2 stalks celery, chopped
  • 1/2 stick margarine
  • 2 pkg. corn bread mix
  • 1 (10 3/4 oz.) can cream of chicken soup, undiluted
  • 9 medium yellow squash, cooked and drained
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Prepare cornbread as instructed on packets.

    Saute onion, pepper and celery in margarine until tender.

    Add to cornbread. Stir in remaining ingredients, mixing well.

    Pour into a 13 x 9 x 2-inch baking dish that has been sprayed with Pam.

    Bake at 400° until it reaches the consistency you desire, approximately 30 minutes.
