  • 5 or 6 squash, sliced
  • 2 eggs
  • 2 Tbsp. onion, chopped
  • 1/4 c. butter
  • 1 1/2 c. cornbread, crumbled
  • 1/2 c. shredded cheese
  • salt and pepper to taste

Directions

    Boil squash (sliced) and onion in just enough water to cover until tender; drain and pour into casserole dish. Mix in butter, eggs, cornbread and cheese. Salt and pepper to taste. Bake at 350° until bubbly.
