Ingredients
- 2 lb. yellow squash
- 1/4 c. water
- 1 (6 oz.) pkg. cornbread, mix and baked as directed
- 2 c. milk
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 2 Tbsp. margarine
- 1 tsp. black pepper
- 1 (10 oz.) can cream of chicken soup
- 2 tsp. poultry seasoning
- 1/2 c. grated Cheddar cheese (optional)
Directions

1Preheat oven to 350°.

2Cook squash in water in covered saucepan until tender.

3Drain and mash.

4Crumble baked cornbread into milk; set aside.

5Saute celery and onion in margarine until tender.

6Add pepper, soup, poultry seasoning and squash.

7Stir in bread mixture.

8Pour ingredients into a 2-quart casserole.

9Bake for 1 hour or until set.

10May top with cheese.
