- 4 large yellow squash
- 1/2 stick margarine
- 1/3 c. celery
- 1 medium onion, chopped
- 1 can cream of mushroom soup
- 1/2 lb. jalapeno cheese, grated
- 3 eggs, beaten
- 1/2 bell pepper, chopped fine
- cornbread
- salt and pepper to taste
Directions

1Cook squash in 1 1/2 cups water with 1/2 onion (drain if watery).

2Stir in 1/2 onion, bell pepper, celery, eggs and everything else.

3Add cornbread to make to the right consistency. Bake at 350° for 30 minutes.
