Squash Dressing

Ingredients

  • 4 large yellow squash
  • 1/2 stick margarine
  • 1/3 c. celery
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup
  • 1/2 lb. jalapeno cheese, grated
  • 3 eggs, beaten
  • 1/2 bell pepper, chopped fine
  • cornbread
  • salt and pepper to taste

Directions

    Cook squash in 1 1/2 cups water with 1/2 onion (drain if watery).

    Stir in 1/2 onion, bell pepper, celery, eggs and everything else.

    Add cornbread to make to the right consistency. Bake at 350° for 30 minutes.
