- 1 lb. yellow squash, sliced thin
- 1 egg, beaten
- 1/4 c. flour
- 1/2 tsp. baking powder
- 1/2 c. corn bread mix
- 1/2 tsp. pepper
- 1 medium onion
- peanut oil (for frying)
- 1/4 tsp. salt
Directions

1Cook squash for 10 minutes; drain and mash.

2Add beaten egg and onion to squash.

3Sift all dry ingredients together.

4Mix with the squash mixture.

5Drop by spoonfuls into hot oil.

6Cook until golden brown, turning once.
