  • 1 lb. yellow squash, sliced thin
  • 1 egg, beaten
  • 1/4 c. flour
  • 1/2 tsp. baking powder
  • 1/2 c. corn bread mix
  • 1/2 tsp. pepper
  • 1 medium onion
  • peanut oil (for frying)
  • 1/4 tsp. salt

    Cook squash for 10 minutes; drain and mash.

    Add beaten egg and onion to squash.

    Sift all dry ingredients together.
