- 2 c. grated squash
- 4 tsp. sugar
- 2 heaping tsp. baking powder
- 1 1/2 c. flour
- 1/2 medium onion, grated
- 2 eggs
- 1 tsp. salt
Directions

1Beat eggs in deep bowl.

2Add the remaining ingredients.

3Mix well and fry in hot pan with small amount of vegetable oil.

4Add more if needed.

5Use one or more tablespoons mixture for each fritter.

6Keep fritters warm in oven while frying.

7Serve with margarine or can be served with pancake syrup.
