  • 1 egg
  • 1 c. milk
  • 1 c. grated yellow squash
  • 1/2 c. sugar
  • 2 c. all-purpose flour
  • 1/4 tsp. salt
  • 2 Tbsp. vegetable oil

Directions

    Beat egg in medium mixing bowl; add milk and squash.

    Combine dry ingredients; stir into squash mixture.

    Stir in oil.

    Spray muffin tins with Pam and heat at 350° until hot.

    Spoon batter into tins, filling cups 2/3 full.

    Bake at 350° about 20 minutes or until done and brown.

    Yields about 1 dozen.
