- 1 egg
- 1 c. milk
- 1 c. grated yellow squash
- 1/2 c. sugar
- 2 c. all-purpose flour
- 1/4 tsp. salt
- 2 Tbsp. vegetable oil
Directions

1Beat egg in medium mixing bowl; add milk and squash.

2Combine dry ingredients; stir into squash mixture.

3Stir in oil.

4Spray muffin tins with Pam and heat at 350° until hot.

5Spoon batter into tins, filling cups 2/3 full.

6Bake at 350° about 20 minutes or until done and brown.

7Yields about 1 dozen.
