Squash Pancakes

Ingredients

  • 2 1/2 c. cooked squash (yellow crookneck)
  • 1/4 c. corn meal (plain)
  • 1/4 c. flour (plain)
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 small chopped onion

Directions

    Cook unpeeled squash until tender.

    Drain and then add all other ingredients.

    Mix and then fry in hot oil until brown, turning like a pancake.

    (If you like, you may add jalapeno peppers to mixture before frying.)
