Squash Parmesan

Ingredients

  • 2 to 2 1/4 c. thinly sliced yellow squash (3 to 4 small)
  • 1/2 c. onion, chopped finely
  • 1 small zucchini, thinly sliced
  • 1 c. grated Parmesan cheese
  • 1/4 c. margarine, melted
  • 3 eggs, beaten
  • 1 c. milk
  • 1/4 tsp. cayenne pepper

Directions

    Place yellow squash in shallow microwave-safe round glass baking dish.

    Top with onion and zucchini.

    Sprinkle with cheese. Combine melted margarine, eggs, milk and pepper.

    Pour over squash.

    Do not stir.

    Cover with plastic wrap and microwave on High for 5 minutes.

    Turn dish a half turn and cook on 50% power for 12 to 14 minutes or until almost set.

    Let stand for 5 minutes before serving.
