Ingredients

  • 2 cups Pureed Squash (preferably butternut)
  • 1/4 cup Cream
  • 1/2 cup Chicken or Vegetable Stock
  • 3 clove Garlic
  • 1 Shallot
  • 1/4 teaspoon Red Pepper Flakes
  • 2 tablespoons White Wine or Vermouth
  • 1/2 cup Parmesan
  • 2 tablespoons Olive Oil
  • 1 tablespoon Fresh Sage
  • 1/4 teaspoon Nutmeg

Directions

    Sautee vegetables and/or meat with garlic and shallot in oil until browned and remove from pan.

    Deglaze pan with wine.

    Add remaining ingredients and bring to a simmer.

    Add previously sauteed vegetables

    Season with salt, pepper, and brown sugar if desired.
