Ingredients

  • 8 c. thinly sliced yellow squash (small)
  • 4 large thinly sliced onions
  • 1 1/2 c. salt
  • 2 tsp. celery seed
  • 2 tsp. mustard seed
  • 4 bell peppers, sliced
  • 3 c. sugar
  • 3 c. vinegar
  • 1 tsp. turmeric

Directions

    Combine onions and squash.

    Add salt and let stand for 1 hour. Pour off excess liquid.

    Combine celery and mustard seed in large boiler.

    Add peppers, sugar, vinegar, onions, squash and turmeric. Bring to a boil 5 to 10 minutes.

    Pour into sterilized jars. Chill before serving.
