- 8 c. sliced squash
- 2 c. sliced onions
- 1 Tbsp. salt
- 1/2 c. diced green peppers
- 1 c. cider vinegar
- 1 3/4 c. sugar
- 1/2 tsp. celery seed
- 1/2 tsp. dry mustard
Directions

1Combine squash and onions.

2Sprinkle with salt and let stand 1 hour.

3Combine green pepper, vinegar, sugar, celery seed and mustard seed.

4Bring this to a boil.

5Add squash and onion; let simmer, then return to a boil.

6Pack pickles into hot, sterilized jars.

7Cover with vinegar mixture and seal.

8Yield: 2 quarts.
