- 1 gal. squash
- 2 c. onions
- 1 large bell pepper
- 1 small hot pepper (optional)
- 4 1/2 c. sugar
- 1 qt. vinegar (white)
- 1 tsp. celery seed
- 1 tsp. mustard or ground mustard
- 1 tsp. turmeric
- 1 tsp. cloves
Directions

1Place squash in layers.

2Sprinkle each layer with salt.

3Let stand overnight.

4(Use non-tarnish bowl.)

5Drain squash.

6Heat all other ingredients in vinegar.

7When strikes a boil, add squash. Boil 4 minutes.

8Can in sterilized jars.

9Process 5 minutes.
