Ingredients

  • 1 gal. squash
  • 2 c. onions
  • 1 large bell pepper
  • 1 small hot pepper (optional)
  • 4 1/2 c. sugar
  • 1 qt. vinegar (white)
  • 1 tsp. celery seed
  • 1 tsp. mustard or ground mustard
  • 1 tsp. turmeric
  • 1 tsp. cloves

Directions

    Place squash in layers.

    Sprinkle each layer with salt.

    Let stand overnight.

    (Use non-tarnish bowl.)

    Drain squash.

    Heat all other ingredients in vinegar.

    When strikes a boil, add squash. Boil 4 minutes.

    Can in sterilized jars.

    Process 5 minutes.
