  • 8 c. yellow squash, sliced thin
  • 2 green bell peppers, sliced thin
  • 2 red bell peppers, sliced thin
  • 2 c. onions, sliced thin
  • 1 c. salt
  • 2 qt. water
  • 3 c. sugar
  • 2 c. white vinegar

Directions

    Mix 1 cup salt and 2 quarts water.

    Pour over vegetables and let stand 1 hour.

    Boil 3 cups sugar and 2 cups white vinegar until syrup (about 3 minutes).

    Put vegetables in and let come to a boil.

    Remove from heat.

    Put in jars and seal.
