  • 3 1/2 c. yellow crooked neck squash, cooked, mashed and drained
  • 4 eggs, beaten
  • 2 1/2 c. flour
  • 1/2 c. flour
  • 1 tsp. nutmeg
  • 4 Tbsp. butter, melted
  • 3/4 tsp. salt
  • 2/3 c. milk
  • 2 tsp. vanilla
  • 2 unbaked pie shells

    Beat eggs and gradually add sugar. To last cup of sugar, add flour and nutmeg and mix well. Add butter and remaining ingredients, including squash. Divide mixture in pie shells. Bake at 450° for 10 minutes. Reduce heat to 350° and bake until knife inserted comes out clean. Pie has consistency of sweet potato or custard pie.
