Ingredients

  • 1 unbaked pie shell (9-inch)
  • 3/4 c. brown sugar
  • 1 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ginger
  • 1/4 tsp. cloves
  • 2 Tbsp. evaporated milk
  • 3 large eggs, separated
  • 1 3/4 c. prepared squash
  • 1/4 c. coconut (may use more or omit)

Directions

    Use large squash.

    Peel and remove inside.

    Cube and simmer until done.

    Squeeze out all water and mash.

    Mix sugar, spices, salt and egg yolks.

    Stir in squash, milk and coconut.

    Pour in pie shell.

    Bake at 400° for 45 minutes.
