- 1 unbaked pie shell (9-inch)
- 3/4 c. brown sugar
- 1 tsp. salt
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
- 1/4 tsp. cloves
- 2 Tbsp. evaporated milk
- 3 large eggs, separated
- 1 3/4 c. prepared squash
- 1/4 c. coconut (may use more or omit)
Directions

1Use large squash.

2Peel and remove inside.

3Cube and simmer until done.

4Squeeze out all water and mash.

5Mix sugar, spices, salt and egg yolks.

6Stir in squash, milk and coconut.

7Pour in pie shell.

8Bake at 400° for 45 minutes.
