  • 3 c. cooked squash (yellow)
  • 1 1/2 c. sugar
  • 1 c. canned milk
  • 1 stick margarine
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. ginger
  • 2 tsp. vanilla
  • 2 Tbsp. cornstarch
  • pinch of salt
  • 4 eggs, separated
  • 2 (9-inch) baked pie shells

Directions

    Cook the squash; measure out 3 cups.

    Add sugar, milk, egg yolks and rest of the ingredients.

    Cook until thick.

    Pour into baked pie shells.

    Beat the 4 egg whites with 1/4 cup of sugar. Bake at 350° until brown.
