  • 2 1/2 c. yellow squash, thinly sliced
  • 1 onion, chopped
  • grated cheese
  • 4 eggs, beaten
  • 1 c. half and half
  • Tabasco, salt and pepper
  • 1 pie shell (extra deep)
  • 1 tomato, sliced (optional)

Directions

    Precook pie shell.

    Lightly saute squash and onion in small amount of margarine.

    Season to taste.

    Mix eggs and half and half.
  5. 5
    Layer ingredients into pie shell.

    Can top with sliced tomatoes.

    Bake at 375° for 50 minutes on bottom shelf of oven. Slice and serve.
