Squash Pie

Ingredients

  • 4 to 5 medium cooked squash
  • 1/2 stick margarine
  • 1 1/2 c. sugar
  • 1 Tbsp. flour
  • 1 c. canned milk or plain
  • 1/2 tsp. lemon flavoring
  • 1 tsp. vanilla flavoring
  • pinch of salt
  • 3 eggs, beaten

Directions

    Cook squash and drain off liquid.

    Put in blender and puree. Combine flour and sugar together.

    Put squash in mixing bowl, add margarine, sugar and flour.

    Mix salt, flavorings and eggs.

    Mix real good and bake in unbaked pie crust.

    (Makes 2 pies.)

    Bake at 350° until done, about 30 to 35 minutes.

    (Use all lemon flavoring or all vanilla, if you like that best.)
