  • 1 1/2 c. cooked and strained squash
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. powdered ginger
  • 2 heaping Tbsp. flour
  • 1 can evaporated milk plus water to make 2 c.
  • 1 1/2 c. sugar
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 tsp. cinnamon

Directions

    Mix spices, flour, salt and sugar well.

    Add squash and mix. Add slightly beaten eggs.

    Scald milk and add to mixture.

    Pour into unbaked crust.

    Bake at 450° about 15 minutes until crust is set, then reduce heat to 300° and bake about 45 minutes or until done.
