- 1 lb squash, sliced in circles then quartered
- 1 lb potato, peeled and cubed
- 1/2 medium onion, chopped
- 1/2 teaspoon salt (to taste)
- 3/4 teaspoon pepper (to taste)
- 2 cups cheddar cheese, shredded
- 1/4 cup water
Directions

1Use a 2-qt. casserole dish. Cook potatoes and onions in water in microwave for 10 minutes on high.

2Add squash, salt, and pepper and stir.

3Add a little water if needed. Cook on high 10 minutes. Stir.

4Add cheese and stir until blended. Cook on high 3 minutes.
