- 2 1/2 c. yellow squash
- 1/3 c. sugar
- 1 c. coconut (optional)
- 1 c. milk
- dash of salt
- 1 tsp. vanilla
- 2 Tbsp. cornstarch
- 2 eggs, beaten
Directions

1Cook, drain and mash squash.

2Combine all other ingredients. Add squash and coconut last.

3Sprinkle nutmeg on top before baking.

4Bake in 425° oven about 35 minutes or until knife comes out clean.
