Ingredients

  • 2 1/2 c. yellow squash
  • 1/3 c. sugar
  • 1 c. coconut (optional)
  • 1 c. milk
  • dash of salt
  • 1 tsp. vanilla
  • 2 Tbsp. cornstarch
  • 2 eggs, beaten

Directions

    Cook, drain and mash squash.

    Combine all other ingredients. Add squash and coconut last.

    Sprinkle nutmeg on top before baking.

    Bake in 425° oven about 35 minutes or until knife comes out clean.
