Ingredients

  • 10 c. squash, chopped
  • 4 green peppers or 2 red and 2 green peppers
  • 4 large onions
  • 1/3 c. salt
  • 2 1/4 c. vinegar
  • 3 1/2 c. sugar
  • 1 Tbsp. nutmeg
  • 1 tsp. turmeric
  • 2 tsp. celery seed
  • 1/2 tsp. pepper
  • 1 Tbsp. cornstarch

    Grind the first 3 ingredients; mix with salt.

    Refrigerate overnight.

    Drain and rinse twice.

    Add the remaining ingredients to the first preparation; cook for 30 minutes, stirring often. Put in hot jars and seal.
