  • 10 c. squash (yellow crookneck)
  • 4 c. onion
  • 5 tsp. salt
  • 2 1/2 c. red vinegar
  • 5 c. sugar
  • 1 Tbsp. dry mustard
  • 3 Tbsp. cornstarch
  • 1 (4 oz.) jar pimento
  • 2 large bell peppers, chopped fine
  • 1 tsp. turmeric
  • 1 tsp. black pepper

Directions

    Wash and put through food processor squash and onion.

    Add salt and stir.

    Let soak overnight.

    Drain.

    Mix together red vinegar, sugar, dry mustard, cornstarch, pimento, bell peppers, turmeric and black pepper.

    Add squash mixture to vinegar mixture and cook about 45 minutes on medium heat.

    Put in jars and seal.

    Yields 8 pints.
