- 10 c. squash (yellow crookneck)
- 4 c. onion
- 5 tsp. salt
- 2 1/2 c. red vinegar
- 5 c. sugar
- 1 Tbsp. dry mustard
- 3 Tbsp. cornstarch
- 1 (4 oz.) jar pimento
- 2 large bell peppers, chopped fine
- 1 tsp. turmeric
- 1 tsp. black pepper
Directions

1Wash and put through food processor squash and onion.

2Add salt and stir.

3Let soak overnight.

4Drain.

5Mix together red vinegar, sugar, dry mustard, cornstarch, pimento, bell peppers, turmeric and black pepper.

6Add squash mixture to vinegar mixture and cook about 45 minutes on medium heat.

7Put in jars and seal.

8Yields 8 pints.
