- 10 c. ground squash (yellow or zucchini may be used)
- 4 medium onions
- 5 Tbsp. salt
- 2 1/4 c. cider vinegar
- 4 to 5 c. sugar
- 1 Tbsp. nutmeg
- 1 Tbsp. dry mustard
- 1 Tbsp. mustard seed
- 1 Tbsp. turmeric
- 1 Tbsp. cornstarch
- 2 Tbsp. celery seed
- 1/2 Tbsp. black pepper
Directions

1Let first 3 ingredients set overnight in refrigerator.

2Rinse well; using colander.

3Add remaining ingredients.

4Grind 2 bell peppers.

5Bring quickly to a boil and simmer 30 minutes.

6Place in sterilized, hot pint jars and seal.

7Makes 7 pints. This relish is great with meats and veggies.
