Ingredients

  • 10 c. ground squash (yellow or zucchini may be used)
  • 4 medium onions
  • 5 Tbsp. salt
  • 2 1/4 c. cider vinegar
  • 4 to 5 c. sugar
  • 1 Tbsp. nutmeg
  • 1 Tbsp. dry mustard
  • 1 Tbsp. mustard seed
  • 1 Tbsp. turmeric
  • 1 Tbsp. cornstarch
  • 2 Tbsp. celery seed
  • 1/2 Tbsp. black pepper

    Let first 3 ingredients set overnight in refrigerator.

    Rinse well; using colander.

    Add remaining ingredients.

    Grind 2 bell peppers.

    Bring quickly to a boil and simmer 30 minutes.

    Place in sterilized, hot pint jars and seal.

    Makes 7 pints. This relish is great with meats and veggies.
