Squash Relish

Ingredients

  • 10 c. squash, chopped (any variety)
  • 4 c. onions (purple if desired)
  • 1 green and 1 red pepper, chopped
  • 2 1/2 c. vinegar (apple cider)
  • 5 tsp. salt
  • 2 1/2 c. sugar
  • 1 tsp. nutmeg
  • 1 tsp. dry mustard
  • 2 tsp. celery salt
  • 2 Tbsp. cornstarch
  • 1 Tbsp. turmeric
  • 1 Tbsp. cayenne pepper

Directions

    Chopped squash, onion and salt may be mixed and refrigerated overnight, if desired.

    Then drain well and combine with other ingredients.

    Simmer for 30 minutes.

    Put in sterilized jars and seal.

    Makes 5 pints.

    (Makes nice gifts in decorative jars.)
