Ingredients
- 10 c. squash, chopped
- 2 green bell peppers, chopped
- 1/2 c. salt
- 1 c. celery, chopped
- 3 c. onion, chopped
- 1 jar pimento, drained
- 2 1/2 c. sugar
- 2 1/2 Tbsp. vinegar
- 1 Tbsp. mustard
- 1 Tbsp. turmeric
- 3 Tbsp. pickling spice
Directions

1Sprinkle squash and bell pepper with salt.

2Let set overnight in ice water.

3Rinse and drain well.

4Add celery, onion, pimento, sugar, vinegar, mustard, turmeric and pickling spice.

5Mix all ingredients together.

6Bring to boil; turn heat down and simmer for 30 minutes.

7Put in jars and seal.
