  • 10 c. ground or grated squash
  • 4 c. ground or grated onions
  • 5 Tbsp. salt
  • 1 c. finely chopped bell pepper
  • 2 1/2 tsp. dry mustard
  • 2 tsp. whole mustard seeds
  • 2 1/2 tsp. turmeric
  • 2 tsp. celery seed
  • 1 tsp. black pepper
  • 2 Tbsp. cornstarch
  • 2 1/2 c. cider vinegar
  • 5 c. sugar

Directions

    Mix squash and onion; sprinkle with salt and let stand overnight. Drain and rinse in cold water. Add all other ingredients to squash in large pot. Bring to a boil and simmer for 30 minutes. Pack in hot pint jars and seal.
