Ingredients
- 10 c. finely chopped squash
- 4 c. finely chopped onion
- 4 Tbsp. salt
- 2 green bell peppers, finely chopped
- 3 red bell peppers, finely chopped
- 2 1/4 c. vinegar
- 4 c. sugar or a little less
- 1 Tbsp. dry mustard
- 1 Tbsp. celery seed
- 1 Tbsp. turmeric
- 1 Tbsp. cornstarch, dissolved in 1/4 c. water
Directions

1Mix squash, onion and salt and leave overnight in refrigerator.

2In the morning, rinse and drain well.

3Put in a large pan with peppers, vinegar, sugar, mustard, celery seed and turmeric.

4Cook until tender, then add cornstarch dissolved in water.

5Add to mixture and boil 5 minutes.

6Pour in sterilized jars and seal.
