Squash Relish

  • 10 c. finely chopped squash
  • 4 c. finely chopped onion
  • 4 Tbsp. salt
  • 2 green bell peppers, finely chopped
  • 3 red bell peppers, finely chopped
  • 2 1/4 c. vinegar
  • 4 c. sugar or a little less
  • 1 Tbsp. dry mustard
  • 1 Tbsp. celery seed
  • 1 Tbsp. turmeric
  • 1 Tbsp. cornstarch, dissolved in 1/4 c. water

Directions

    Mix squash, onion and salt and leave overnight in refrigerator.

    In the morning, rinse and drain well.

    Put in a large pan with peppers, vinegar, sugar, mustard, celery seed and turmeric.

    Cook until tender, then add cornstarch dissolved in water.

    Add to mixture and boil 5 minutes.

    Pour in sterilized jars and seal.
