Squash Rice Casserole

  • 1 stick oleo
  • 1 c. uncooked rice
  • 2 c. shredded squash (omit seed)
  • 1/2 c. chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can cream of mushroom soup
  • water

Directions

    Put rice in a pan; put water in pan to just cover rice.

    Cook for 5 minutes.

    Melt oleo in a 13 x 9-inch pan and layer ingredients in order given (may use more water if need be).

    Bake in a 350° oven for 40 minutes or until rice is done.
