- 3 lb. yellow squash, sliced
- 2 onions, chopped
- 2 carrots, sliced
- 2 cans cream of chicken soup
- 1 carton sour cream
- 1 small jar pimentos
- 1/2 c. melted butter
- 1 pkg. Pepperidge Farm stuffing mix
Directions

1Cook squash, onions and carrots in boiling salted water until tender; drain well.

2Add soup and sour cream.

3Drain pimentos; chop.

4Add to squash mixture; stir well.

5Mix butter and stuffing in greased casserole.

6Add squash mixture.

7Cover with remaining stuffing mix.

8Bake in preheated 375° oven for 45 minutes.
