Squash Souffle

Ingredients

  • 2 lb. yellow squash, sliced
  • 1 medium onion, sliced
  • 1 tsp. sugar
  • 3 Tbsp. butter, melted
  • 3 Tbsp. flour
  • 2 eggs, slightly beaten
  • 1 c. milk
  • 1 pkg. Cheddar cheese
  • salt to taste
  • buttered bread crumbs

Directions

    Combine squash, onion and sugar.

    Simmer with a small amount of water for 20 minutes.

    Drain well.

    Mash squash with a potato masher.

    Add eggs, melted butter, flour, milk and cheese.

    Add salt to taste.

    Bake in a buttered 1 1/2-quart casserole dish for 30 minutes.

    Top with bread crumbs and bake for 10 minutes more at 350°.
