- 2 lb. yellow squash, sliced
- 1 medium onion, sliced
- 1 tsp. sugar
- 3 Tbsp. butter, melted
- 3 Tbsp. flour
- 2 eggs, slightly beaten
- 1 c. milk
- 1 pkg. Cheddar cheese
- salt to taste
- buttered bread crumbs
Directions

1Combine squash, onion and sugar.

2Simmer with a small amount of water for 20 minutes.

3Drain well.

4Mash squash with a potato masher.

5Add eggs, melted butter, flour, milk and cheese.

6Add salt to taste.

7Bake in a buttered 1 1/2-quart casserole dish for 30 minutes.

8Top with bread crumbs and bake for 10 minutes more at 350°.
