- 4 c. yellow squash
- 1/2 c. mayonnaise (lite)
- 1/2 tsp. salt
- 1/2 onion, sliced
- 4 eggs, beaten
- 1 doz. saltine crackers
- 1 c. grated Cheddar cheese
- pepper (optional)
Directions

1Slice, cook and drain squash.

2Add mayonnaise to beaten eggs. Add squash, onion and crackers (rolled fine).

3Add salt, then blend well.

4Pour into buttered dish.

5Top with grated cheese. Bake in a 300° oven for 45 minutes.
