  • 4 c. yellow squash
  • 1/2 c. mayonnaise (lite)
  • 1/2 tsp. salt
  • 1/2 onion, sliced
  • 4 eggs, beaten
  • 1 doz. saltine crackers
  • 1 c. grated Cheddar cheese
  • pepper (optional)

Directions

    Slice, cook and drain squash.

    Add mayonnaise to beaten eggs. Add squash, onion and crackers (rolled fine).

    Add salt, then blend well.

    Pour into buttered dish.

    Top with grated cheese. Bake in a 300° oven for 45 minutes.
